1. Turn on Instant Pot and select Saute mode.
2. Pat dry beef for a good sear.
3. Season well with salt and pepper.
4. Sear beef on all sides for approximately 3 min per side.
5. Set beef aside. Add some tomato paste and any herbs, then deglaze with liquid like red wine. Season with salt and pepper.
6. Add beef back into pot, along with more liquid, e.g. stock.
7. Set Instant Pot on pressure cook for 1 hour 30 minutes.
8. Vent and let roast rest in liquid.
9. Serve with torn herbs and crusty bread. Enjoy!
