Healthy, Fast and Easy Crock pot Beef Pot Roast Recipe.  My husband’s favorite!  Everyone loves it!

Looking for an easy and delicious but healthy beef pot roast in the crock pot? This recipe is sure to please your whole family, even your kids! This is also great for a party, potluck or get-together. It takes just minutes to prep and then let the crockpot do all the work. Fast, simple and melt-in-your mouth good!

3lb Boneless chuck roast
2 tsp sea salt
1 1/2 tsp pepper
1/4 cup brown rice flour (or other gluten free flour)
2-3 Tbsp neutral oil

For sauce:
2 Tbsp Mayonnaise
2 tsp Apple cider vinegar
1/2 tsp dried dill
1/2 tsp red chili flake (optional)
1/4 tsp paprika

Rub salt and pepper into beef. Then rub the flour all over beef until coated. Mix sauce ingredients in a small bowl and set aside.
Heat skillet to med-high heat. Place 2-3 Tbps neutral oil (I used refined coconut oil) in pan and allow to melt. Sear beef on each side for 2-3 minutes until a nice crust has formed. Place beef in crockpot. Top with the sauce and allow to cook on low for 6-8 hours.
For extra creaminess, put 2-3 Tbsp of non-dairy butter in the crockpot and allow to melt.
Shred beef with fork and serve however you like! Enjoy.
