Mississippi Pot Roast | Crockpot Recipe | Cooking Up Love

Our Mississippi Pot Roast Crockpot Recipe gets its legendary flavor from a jarful of pepperoncini peppers and zesty spice mixture! This recipe will quickly become your family’s favorite. After 8 hours of slow cooking, you’re treated to this amazingly tender Mississippi roast with an incredibly delicious unique, slightly tangy taste thanks to the peppers and pickling brine.

Mississippi Pot Roast Tips
You’re going to love how simple this recipe is! With only 4 ingredients, it comes together in less than 15 minutes and is into the crockpot to cook for 7 – 8 hours.

Mississippi Pot Roast Ingredients
1 4 lb. boneless chuck roast
2 tablespoons olive oil
1 package Zesty Italian salad dressing and seasoning mix
1 16 oz jar pepperoncini peppers
4 oz unsalted butter

Mississippi Pot Roast Crockpot Recipe Directions
First, trim up the boneless chuck roast. I like to trim off the larger pieces of fat, so I have less to deal with when it’s done cooking. Then pat the roast dry with paper towels and season with salt and pepper.

Heat about 2 tablespoons of olive oil in a large cast iron skillet over high heat. Add the roast, and sear it on all sides. This should only take about 3 – 4 minutes on each side. This step is optional, and the roast can go right into your slow cooker or crock pot. Browning the roast will give it a nice depth of flavor and a caramelized top.

Place the roast into your crockpot or slow cooker, then sprinkle a package of Zesty Italian salad dressing and seasoning mix over the roast. Pour an entire 16 oz jar of pepperoncini peppers and the brine over the roast. The peppers add a tangy flavor and the vinegar in the brine helps tenderize the beef and balances the richness of the butter in the sauce. The pepperoncini peppers are very mild, and if you can’t find them in your market, you can substitute banana peppers – use both the peppers and the brine too!

Next, add 1/2 cup, or 4 oz of unsalted butter. I cut the butter into pats, and distribute over the top. I’ve seen some people put the entire stick on top of a Mississippi roast and it turns out great this way too. Our recipe uses half of the amount of butter the traditional Mississippi Roast calls for, and it’s still VERY rich 😋

Then just cover the slow cooker or crockpot and cook on low for about 7 – 8 hours until the beef roast is very tender. Once it’s ready, remove the beef from the crockpot. To serve the sauce with your Mississippi Roast, spoon off the fat, or place the sauce in the freezer for about 15 minutes to help it separate and then spoon off. Heat over medium heat to reduce, or thicken with a cornstarch slurry.

Making Mississippi Pot Roast In The Oven
If you don’t want to use a slow cooker, Mississippi roast can easily be made in the oven. After seasoning and searing the roast, place the ingredients in a large oven-safe baking dish and cover tightly with foil. Bake at 275 degrees for about 1 hour per pound, about 4 hours for a 4 pound roast.

Today I’m serving this heavenly recipe with Crispy Smashed Red Potatoes! It’s also wonderful served with mashed potatoes or egg noodles. And if you’re lucky enough to have leftovers, it also makes incredible sandwiches on crusty rolls topped with provolone or mozzarella cheese!
