3-5 pound beef roast
½ – 1 cup pickle juice
8-10 potatoes, peeled and chopped
8-10 carrots, peeled and chopped
3 onions, peeled and chopped
-Centre your roast in the middle of a large crock pot. Pour Pickle juice over its. Surround with layers of your veggies. Cook on low for 8-10 hours, or high for 6 hours.
1-2 cups strained juice from the bottom of the crock pot.
2-4 tbsp corn starch
-make a slurry with cornstarch and a few tablespoons of reserved juices.
-Bring remaining drippings to a boil. Slowly whisk in the cornstarch slurry, stirring until thickened.
