In honor of my many journeys to Mexico, today, I’m showing you how I make an easy crockpot Chicken Birria using a beautiful melody of spices—LOTS AND LOTS OF SPICES—blended with dried chilies.

Ingredients:
2 pounds chicken thigh
1 yellow onion (halved)
3 bay leaves
5 chili de Arbol & 5 Guajillo chiles (stems and seeds removed)
1 + 1/2 cups hot water
1 Roma tomato
1/2 tablespoon sea salt
1 tsp ground black pepper
1 Tbsp chili powder
1 tsp cumin
1 tsp smoked paprika
2 tsp Mexican oregano
1 tsp thyme
1 tsp garlic powder
2 tsp allspice
1 tsp adobo
5 to 6 cloves garlic
