In today’s video, I will share how I make beef pot roast that is flavorful, tender and moist cooked in a slow cooker/crock pot with rich, creamy and garlicky whipped mash potatoes!

INGREDIENTS FOR THE BEEF POT ROAST (I doubled the recipe in the video, don’t be alarm with the measurements below. I cook every other day, so it’s our dinner for 2 nights):
3-4 lbs. chuck roast
1/4 cup-all-purpose flour
3-TBSP of olive oil to sear the beef
1-2 sprigs of rosemary
1-2 sprigs of thyme
4 cloves garlic
2 large carrots
2 ribs celery
1 medium white onion
1 cup- beef broth
1 cup-chicken broth
1/2 cup- beer (your choice of brand)
2 1/2 TBSP cornstarch
2 1/2 TBSP cold water
INGREDIENTS FOR THE WHIPPED MASHED POTATOES
3 LBS potatoes cut into cube (your choice)
1 head of garlic
1 tsp-salt (more to adjust)
pinch of black pepper
1 bar- cream cheese
2 TBSP- unsalted butter
