beef chuck roast
(3 to 4 pounds)
1/4 cup plus 2
tablespoons flour,
divided
1/4 cup olive oil, divided
2 carrots, peeled,
chopped
2 stalks celery, chopped
1 medium onion,
peeled, chopped
3 cloves garlic,
peeled, crushed
1 can (28 ounces) whole
plum tomatoes in purée
1 cup red wine
1 cup beef broth
3 sprigs fresh thyme
2 sprigs fresh rosemary
1 tablespoon butter,
softened
