This recipe is so simple!
Ingredients:
– 1kg beef short ribs
– 2 x carrots, chopped
– 4 x celery stalks, chopped
– 1 x large onion chopped
– 8 to 10 garlic cloves
– 2 x large red chilli
– 2 tsp tomato paste
– 2 tsp flour
– 1 cup red wine
– beef stock (or water)
– 4 x spring fresh rosemary
– 2 x bay leaves
– sea salt & black pepper
Method:
– pre-heat the oven to 180 degrees C
– Season the beef with salt & pepper
– brown the meat over medium heat until well browned (remove)
– saute the carrots, celery & onion for about 5 minutes
– add the tomato paste & flour and cook for 2 minutes
– add the garlic cloves & chilli
– add the wine & reduce…simmer for about 5 minutes
– add the stock, taste & season with salt
– add the rosemary & bay leaves
– cook for 2 to 3 hours, checking every 30 minutes.
