SLOW ROASTED (GRILLED) MAPLE-CHIPOTLE BUTTER CAULIFLOWER WITH TAHINI-LIME SAUCE!

For the cauliflower:
1 medium head cauliflower, leaves removed
3 tbsp unsalted butter, softened
1 tbsp maple syrup
1/2 tsp salt
3 tbsp chopped cilantro
1/2 tsp chipotle chili powder
1/2 tsp paprika
1/2 tsp cumin
1 clove minced garlic

For the tahini sauce:
1/4 cup tahini
2 tbsp water
2 tbsp lime juice
1/2 tsp cumin
1 clove minced garlic
1/4 tsp salt
Pepper to taste

For the toppings:
Chopped cilantro
Chopped pistachios
Maple syrup

1️⃣Preheat the grill to medium heat. 2️⃣Make the butter. Add the butter, maple syrup, cilantro, salt, chili powder, paprika, cumin and garlic to a small bowl. Mash the ingredients together with a fork then mix well to combine. 3️⃣Next, spread the butter over the surface area of the cauliflower. Place the cauliflower on the grill on the top rack and roast for 45-55 minutes, covering the cauliflower with foil halfway through so that it doesn’t get too dark. 4️⃣While the cauliflower roasts, make the sauce. Add the tahini, water, lime juice, cumin, garlic, salt and pepper to a bowl. Whisk until it becomes smooth. 5️⃣ Serve the cauliflower topped with the sauce, cilantro, pistachios and maple syrup.
