Crockpot Cream Of Mushroom Beef Pot Roast

Hello folks!

Today I made this delicious beef pot roast in the slow cooker – or Crockpot 🙂 Such an easy and delicious meal that everyone will love! This is amazing with mashed potato or even with rice…or on its own with a big hunk of crusty bread.

What I used – Serves 4

1kg Aberdeen Angus beef joint
2 Tablespoons olive oil
1 Medium onion – finely diced
250g (9 oz) Chestnut mushrooms – sliced or diced
2 Tablespoons plain flour
1/2 Teaspoon of salt, pepper, onion & garlic powder
300ml (8 oz) Beef stock
1 295g (10.4 oz) Can Campbells condensed cream of mushroom soup

Rub 1 tablespoon plain flour, the salt, pepper and garlic into the beef.
Sear on all sides in a hot frying pan with a little olive oil.
Once browned all over remove from the pan and place in the slow cooker.
Fry the onions in a little more oil (if needed) until translucent – or beginning to go soft, then dd the mushrooms and fry until they are starting to go brown on the edges.
Stir in 1 tablespoon plain flour and cook for a minute.
Add the beef stock and bring to a simmer for a minute.
Add the mushroom soup and stir well.
Add the sauce over the top of the beef in the slow cooker.
Cook on low all day or on high for 4-6 hours. Break the beef up in the slow cooker once ready and stir into the sauce…or remove the beef and slice it.
