Ingredients
4 pounds beef round boneless rump roast
1 white onion
5 carrots
3 stalks celery
5-6 Yukon gold potatoes
1/2 bottle red wine
1/4 teaspoon red pepper flakes
1/2 ounce dried Porcini mushrooms
32 ounces beef stock
fresh thyme
2-3 Tablespoons butter
1-2 Tablespoons flour
8 – 10 ounces mushrooms (I used baby bellas)
*Kosher Salt and black pepper to taste
